GOOSEBERRY FROZEN FOOL


This really is a cheat as it is nothing more complicated than the Red Gooseberry Fool from the other day, frozen and defrosted slightly. It has been my resolution this year to not only waste less food but also to be creative with the remainders of meals.

To make this , just take any of the gooseberry fool which is uneaten and put it in a plastic container with a lid.
Place in the freezer until about an hour before you need it. Then take it out and allow to defrost in the fridge. (You will need to use it all in one go.)
After half an hour, give it a good stir and then put back in the fridge.

I have served it here with the meringues left over from the Gooseberry Mess.
