POTATOES IN A BAG

A lovely way to cook new potatoes, keeping all the goodness intact.

Serves 2 but can easily be multiplied

8 - 10 new potatoes, washed gently
30g butter, cut into chunks
handful of fresh herbs, such as parsley, chopped roughly
salt and black pepper

Take a large sheet of baking parchment and fold it in half. Place it on a baking tray and put the potatoes in the middle.
Place herbs and butter over the top of the potatoes and season well.
Fold the parchment in from each corner until you have a parcel. Turn it over, making sure all the edges are sealed.
Cook at Gas 4/ 180˚C for about 40 minutes. Unfold and check with a sharp knife. If they are not soft enough, replace in the oven for another 10 minutes (although they should still retain some firmness).
Place in a bowl and pour the liquid over the top.
